Larry’s Mexican Spinach Dip
Larry Gagnon made this dip for Foster Electric’s big Christmas Chow Down the week preceding Christmas and everyone loved it. I had to have the recipe. I’ve been informed that Larry and his wife, Jamie (her blog, All-Ten-Toes, is featured on my blogroll–check it out sometime…) make it very differently from one another. This is one of those recipes that you can definitely tinker with and make your own. I’ve listed everything here exactly as Larry described his creation to my husband, but if you prefer things a little less spicy, use two cans of regular Rotel instead of one spicy and one regular. Instead of the Pepper-Jack, try using regular cheddar. Play around with it and get creative.
1 can spicy Rotel tomatoes
1 can regular Rotel tomatoes
1 can corn, drained
1 pkg frozen spinach
1 can black beans, drained
8 oz block pepper jack cheese
2 pkgs cream cheese
Mix all ingredients together in crock pot until melted together—yummy!
