Meme’s Applesauce Cake

Meme is my maternal grandmother, and man, can that woman cook. (I am very blessed to come from a line of gifted cooks…). This is one of her specialities. Enjoy.

3 eggs

2 cups sugar

2 cups chopped nuts

1 cup butter, softened

2 cups all-purpose flour

1 tsp cinnamon

1 tsp baking soda

1 tsp vanilla

¼ tsp salt

1 ½ cups applesauce

 

Cream butter and sugar. Beat eggs separately, then add to mixture. Add all dry ingredients. Once well mixed, add applesauce and vanilla. Bake in well-greased Bundt pan in 300 degree oven for 1 hour and 15 minutes, or until done—cake tester should come out clean when inserted and cake should be slightly springy to the touch.
