Hot Chicken Salad

Great party dish!

 

4 cups chicken, cooked and diced

Seasonings to taste: minced onion, salt, pepper, celery salt, thyme

2/3 cup slivered almonds (optional)

1 can cream of chicken soup

1 cup mayonnaise

1 tsp lemon juice

2 cups shredded cheddar cheese

Either Ritz crackers or potato chips, crushed

 

Mix together soup, lemon juice, and mayonnaise; blend in seasonings, almonds, and half the cheese. Add chicken to mixture and spread in a greased 9×13 baking dish. Top with remaining cheese and crushed crackers/chips. Bake at 350 degrees for 20-25 minutes or until cheese bubbly and top is browned. Serve with French bread or rolls. Serves 10-12 people.
