Potato-Beef Soup

1-2 tsp celery seed

1 tsp dried basil

3 tbsp butter

1/4 cup all-purpose flour

3 cups chicken broth

package diced potatoes w/onion

1 lb browned ground beef

8-oz cubed velveeta cheese

1-1/2 cup milk

salt and pepper to taste

1/4 cup sour cream

Simmer potatoes, seasonings, and butter in broth until potatoes are tender. Take a small portion of the broth in a small saucepan and slowly add to flour to create a thin gravy–then add this to the potato mixture. (Do this instead of adding flour all at once to the liquid; this will prevent clumping.) Add beef, cheese, and milk and cook until cheese is melted. Remove from heat and blend in sour cream.
